Ingredients
  

  • 10 ounces dried egg noodles wide noodles work best
  • 1 pound lean ground beef 90/10 or 93/7 lean ratio
  • Salt to taste
  • Black pepper to taste, freshly ground preferred
  • 2 cans 10.75 oz each condensed cream of mushroom soup (do not dilute)
  • 1 jar 15 ounces Lay's French Onion Dip (room temperature preferred)
  • 1/2 cup French's fried onions reserve some for topping
  • Fresh parsley optional, for garnish

Instructions
 

  • Prepare the Noodles: Bring a large pot of salted water to a rolling boil. Add the dried egg noodles and cook according to package directions until al dente, about 8-10 minutes. Drain the noodles well and set aside.
  • Brown the Beef: While the noodles are cooking, heat a large skillet over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Season generously with salt and pepper. Cook for 6-8 minutes until the beef is completely browned and no pink remains. Drain any excess fat if necessary.
  • Combine the Ingredients: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked noodles, browned ground beef, both cans of cream of mushroom soup, and the entire jar of French onion dip. Stir everything together until well mixed and evenly coated.
  • Assemble the Casserole: Transfer the mixture to a greased 9x13 inch baking dish. Spread it evenly across the dish. The mixture should be creamy and cohesive, not dry.
  • Add Topping and Bake: Sprinkle the French fried onions evenly over the top of the casserole. Place the dish in the preheated oven and bake for 15-20 minutes until heated through and the onions on top are golden brown.
  • Garnish and Serve: Remove the casserole from the oven and let it rest for 5 minutes. Sprinkle with freshly chopped parsley if desired. Serve hot and enjoy!

Notes

Don't Overcook the Noodles: Cook egg noodles just until al dente. They'll continue cooking in the oven, so slightly underdone noodles prevent mushiness.
Drain the Beef Properly: If your ground beef releases a lot of fat, drain it thoroughly to avoid an oily casserole.
Room Temperature Dip: Let the French onion dip sit at room temperature for 15 minutes before using for easier mixing.
