Ingredients

  • - 2 tablespoons butter regular or salted butter preferred
  • - 2 tablespoons oil olive oil, avocado oil, or vegetable oil
  • - 4 medium russet potatoes chopped into bite-sized cubes, skin optional
  • - 1 medium onion diced evenly for consistent cooking
  • - Salt to taste start with 1/2 teaspoon, adjust as needed
  • - Pepper to taste fresh ground black pepper recommended

Instructions

  • Heat butter and oil in a large skillet over medium heat. Once the butter melts completely, add the cubed potatoes and diced onions in an even layer. Season generously with salt and pepper.
  • Cover the skillet with a lid and cook for 5 to 6 minutes. This allows the potatoes to develop a light crust on the bottom while steaming slightly to ensure they cook through evenly.
  • Remove the lid and flip the potatoes carefully using a spatula. Cook uncovered for another 5 minutes, or until they achieve a beautiful golden-brown crust and are tender when pierced with a fork.
  • Serve immediately while hot for the best texture and flavor experience.

Notes

- Cut potatoes into uniform 3/4-inch cubes for even cooking
- Don't overcrowd the pan - spread potatoes in a single layer
- Resist stirring frequently to achieve better browning
- Yukon Gold or red potatoes can substitute for russet potatoes
- For dairy-free: replace butter with vegan butter or extra oil
- For paleo: substitute ghee for butter
- Add garlic powder, smoked paprika, or Cajun seasoning for extra flavor
